Most “Halloween Oreo cookies” on Pinterest are not actually Oreo cookies. They are regular sugar cookies with a crushed Oreo sprinkled on top, or a photo of a plate where the Oreo is doing decoration work, not baking work. I wanted the real thing: a whole Oreo, unbroken, sealed inside a soft double chocolate cookie,…
I found the timing on this recipe by accident. I pulled the first pan a minute late, answered the door, and by the time I got back the cookies had firmed up enough that I couldn’t press a Reese’s Cup into the center without cracking three of them straight down the middle. I have made…
The first batch of ghost cookies I cut for this recipe came out of the oven as ghost-shaped puddles. Every point on every raised arm had rounded itself into a soft curve. I creamed the butter and sugar the way I cream it for every other cookie on this site — medium speed, three minutes,…
The first time I baked pumpkin pie bars, I pulled them from the oven at 375°F after the surface looked set and the edges had pulled slightly from the sides of the pan. They looked done. I cooled them for two hours, lifted them from the pan, and cut one open. The center was completely…
I found the version I wanted by accident. I had set out to test whether patting the pumpkin purée dry made any difference, and I did it more aggressively than I intended — three rounds of paper towels, pressed hard, most of the visible moisture gone. That batch was the one. Thicker centers. Actual chew….
The thing most people misunderstand about an Oreo cookie cake is that it is not a chocolate cake with Oreo pieces thrown in. The cream cheese in the batter is doing the structural work here — it is what gives every slice that dense, creamy interior you can see in the cross-section photo above, where…
There is a version of this mug cake that comes out rubbery and dense, with a fully cooked center that tastes like a dry chocolate sponge someone microwaved too long. I made that version six times before I understood what I was actually trying to build. The molten center is not a happy accident. It…
Funfetti sheet cake should be the easiest thing I make. It is not. The first three batches I made came out of the pan looking exactly right — pale golden edges, flat level top, a satisfying pull from the pan walls — and still tasted wrong. Dense. Slightly greasy. The kind of cake that is…
The first time I made this, I did not believe the method was real. Dump the fruit in the pan. Dump the dry cake mix on top. Lay cold butter slices across the surface. Walk away. That is the entire recipe — no creaming, no folding, no batter to assess. I kept waiting for the…
I did not take mug cakes seriously for a long time. They seemed like a compromise — the baking equivalent of deciding you did not really want cake. Then I started getting reader questions about them. A lot of them. And I realized I had been wrong about what a mug cake is actually for….
