Creams butter and sugar for six cookie types on this blog. I use speed 4 for creaming and speed 1–2 for flour incorporation. Correct for every cookie recipe here from small-batch to full double-batch.
For shortbread: speed 1 only. Overmixing at this stage turns sandy texture into tough texture.

One cup of flour measured by volume ranges from 120g to 160g depending on how the cup was filled. That 40g difference changes a cookie’s spread from normal to pooled flat. Every flour measurement on this blog is in grams because of exactly this.
Used for the 2g difference between standard and small-batch chocolate chip cookie dough that changes spread behavior.

Bar baking is less forgiving than drop cookies on pan choice. Bars bake edge-to-center, so the pan conducts heat outward from the sides. The wrong pan means overbaked edges before the center sets.

Glass is the correct choice for dump cake — it heats more slowly than metal, so the fruit layer has time to fully bubble before the cake mix topping overbrowns. You can also see the bottom layer color from outside the oven without opening the door.
Peach dump cake. The slow heat conduction is intentional — the base must bubble fully before the topping is done.

Butter temperature is the most commonly skipped variable in cookie baking. At 65°F it creams correctly and traps air. At 75°F it’s too soft to hold air and produces flat cookies. This thermometer gives a reading in three seconds.
